The Northern Lights glow above one of Lofoten Norway's countless drying racks.

These racks are used primarily from late January through to May for hanging 'stockfish'; primarily cod, that is caught and then hung outside in the elements to dry naturally. Lofoten's unique location above the Arctic Circle, yet in the path of the Gulf Stream, allows a fairly consistent temperature range where it doesn't get too cold for the fish to freeze, nor too warm for the fish to rot. The air is also quite dry, and inclement weather, although fairly frequent, never lasts too long. The resulting naturally dried fish is highly sought after the world over; especially by Italy and Nigeria.
